Mmmmm... Yummy

I'm taking a break from sorting and flinging my excess clutter. I can't say I'm doing more flinging than sorting, because obviously I have to sort it to fling it. But I am flinging more than I'm keeping! I'm loving it! The 2nd hand store came by earlier and picked up some stuff, but we have more. A whole lot more!
 Anyway, back to mmmm... yummy! I have poppers in the oven.

You’ll need:
Jalapeno peppers – some people consider 3 per person a good number, but it just depends on your gang. My gang of boys can eat way more than 3 each. In fact, my little princess could eat way more than 3!
Cream cheese - enough to stuff the peppers. About a tablespoon for each popper
Bacon – 1 strip of bacon for 2 poppers, or you can cut the strips into thirds then it would be 1 strip for 3 poppers.

These are so easy to assemble.
Cut a slit in the jalapenos. Now that can be the tricky part. Scrape out the seeds and white pithy part of the pepper. The seeds and juices inside the jalapenos are really hot. If you want some real heat in your popper, leave a few of the seeds. For milder poppers, scrape it all out. Some people recommend you wear rubber gloves, but I don't. They don't bother my skin. However, do NOT allow your little children to get a hold of those seeds or white pithy part of the pepper. They can leave blisters. In fact, the peppers without the seeds can leave blisters on tender skin. Just be careful.
Stuff the jalapenos with cream cheese. I use the low fat variety, but they are way better with the regular cream cheese. Then wrap the bacon around the cream cheese stuffed pepper. Secure it with a toothpick. Then put them onto a baking sheet. Bake at 425 degrees for at least 20 minutes. You’ll want the bacon to be nice and crispy. These are great on the BBQ grill too.  
They are so yummy! We are having a really late lunch since T-man and I forgot to take a lunch break OOPS! See what happens when you are having fun? FUN? Flinging my things is fun. I sound like a new woman. I'm off... my timer is calling my name! Actually T-man is calling my name. "Hey mom, are these done?" Okay! I'm really off...

Okay, this is one of those horrible yet wonderful posts. You literally have my mouth watering. Okay, now I have to get off of the computer and go to bed. It will be hard to get to sleep because of my distracted thoughts about jalepeno poppers, but once I get to sleep, I will have sweet dreams about them. I don't know if the ones I've tasted had bacon on them, but they were certainly good!!!

Now I am going to have to make some jalepeno poppers. I have always just bought them (not often) at the gas station. I will have to try my hand. I'm pretty sure that my husband will flip over this new art that I'm going to learn. He loves, loves, loves jalepeno poppers.

Gale, I love the coated, deep fried poppers too, but this is easy to make at home without the deep fryer. Mmmm... poppers and fresh squeezed limeade. Yummy!
