Easy Corned Beef and Cabbage

 This is an easy meal. Great for busy nights during baseball season!

  • 4 - 5 lb corned beef brisket

  • red potatoes cut into  halves or quarters

  • 1 small carrot (traditionally you don't serve carrots on St. Patrick's Day - I do not know why - this one carrot helps with the bitter taste)

  • 2 or 3 medium onions cut in quarters

  • Seasoning Packet - the one that comes in with the brisket

  • 1/2 tsp peppercorns

  • 3 TBS vinegar

  • 3 TBS sugar

  • 1 1/2 Cups water

  • one head of cabbage cut into quarters


Put everything except the cabbage into your slow cooker. You may need to cut the brisket to fit. Cover and cook on low about 4 hours. Add the cabbage to the slow cooker. Cook another 4-6 hours. If you are going to be gone all day you can put the cabbage into the crockpot along with everything else. If this isn't a St. Patrick's day meal, add all the carrots you want! YUM!
